Feast with Fern: Delicious Vegetarian Recipes from My Tiny RV Kitchen
Welcome to Feast with Fern -- There are few things in life more satisfying than a truly delicious meal. For years, I thought great food could only be found in restaurants—but learning to cook changed everything.
I didn’t grow up in the kitchen, and for most of my life, I relied on takeout, frozen meals, and a steady rotation of sandwiches and cereal. It wasn’t until we moved into our RV full-time that I finally embraced cooking—first out of necessity, then out of love.
Now, cooking is one of my greatest joys, and Feast with Fern is where I share the meals I make over and over again—dishes that are simple, flavorful, and worth every bite.
How Feast with Fern Started
When James and I hit the road in Fern, we set out to eat at as many amazing restaurants as possible. But after a while, I realized I wanted to be able to create those meals myself—not just experience them.
It wasn’t an easy start. I didn’t have the confidence, the know-how, or the patience. But I learned—one meal at a time. I started experimenting with fresh, whole ingredients, making meals from scratch, and discovering that cooking could be just as exciting as trying a new restaurant.
Now, whether I’m whipping up a quick weeknight dinner, recreating a favorite dish from our travels, or spending a whole afternoon making homemade pasta, cooking is something I genuinely love.

Cooking in an RV Kitchen
Cooking in an RV kitchen comes with its own set of challenges, but it’s made me a better cook in so many ways. I’ve learned to:
-
Maximize small-space storage – James even built me a custom pantry & spice rack to make the most of our setup.
-
Plan meals strategically – Since we boondock and stay in remote places, grocery trips require careful planning.
-
Make the most of simple, high-quality ingredients – Good food starts with good ingredients, and I believe that the best meals don’t have to be complicated.
Favorite Meals and Cooking Moments
-
Go-To Meal – A tofu dish with a flavorful sauce and sticky rice. Easy, filling, and always a hit.
-
Most Memorable Cooking Experience – James and I once made a 10-layer lasagna from scratch, including homemade pasta, bolognese, and béchamel sauce. It was a masterpiece.
-
A Dream Meal to Share – I’ve never cooked for my mom, dad, and sister, but I’d love to. I think I could surprise them with how good vegetarian food can be.
Cooking is one of the ways I show love, and I especially love making meals for James. I always watch for his reaction after the first bite—if he closes his eyes, nods his head, and says “mmm,” I know it’s a winner.
